Ryschewys close and fryez

The "Ryschewy" is a kind of dumpling pasta, stuffed with nuts and spices, which closes and fry to eat. It is believed that this dish came to England in time of the Crusades.

And this is the recipe with the amounts to twelve servings :

Filling:

- 3 figs
- 3 chopped dates
- A tablespoon of raisins chucharada
- Half a teaspoon of walnut powder
- Half a teaspoon of black pepper
- Half a teaspoon of cinnamon

For the pasta:

- 100 gr of flour
- A
tablespoon sugar - Pinch of saffron dissolved in half cup of water

Instructions:

- Chop the figs and macerated in a mortar
- Add the dates and raisins
- Chop and add the spices. The spices have to be very balanced in numbers, so if you see that there is only one other, add any missing to compensate
- Add spices to nuts and mix well
- Make a paste with flour, sugar and saffron dissolved in water
- Roll the dough and make it as thin as paper
- Cut the dough into small circles (the size of a cup, for example)
- Add a small amount of mixture of fruit (about half a tablespoon)
- Moisten edges of dough with water, and close as if it were
pea pod - Fry in oil in a skillet or deep fryer for a couple of minutes, until golden
- Serve hot, sprinkled with sugar
